Why I’m Making Tiny Tarts Right Now

Last night, I found myself staring at a box of strawberries that’s about to spoil. Not because I forgot, but because I was secretly avoiding making the big dessert I’d planned.

Then I remembered the little jars of pastry cream I’ve had in the back of the fridge for ages. Started piecing together what I could do with both. Usually, I’d whip up a big tart, but today? I wanted something that fit in my hand, stood straight up on the plate without a fuss, and didn’t require me to break out the stand mixer.
