Chickpea Chicken
- 1 tbsp Olive oil
- 2 tbsp Soy sauce
- 1 Can of Chickpeas (garbanzo beans), drained
- ⅓ cup Vegetable broth
- 1 tsp Poultry seasoning
- ⅓ cup Panko bread crumbs
- ½ cup Vital wheat gluten
- 1 cup Bread crumbs, for coating the outside
- ½ tbsp Salt
- Pinch of Black pepper
Vegan Caesar Dressing
- ¼ tsp Garlic powder
- Pinch of Salt and pepper
- 1 tbsp Nutritional yeast
- 1 tsp Dijon mustard
- ¼ cup Vegan mayo
- 1 tbsp Capers
- Juice of 1 Lemon
Preheat the oven to 400°F. Drain and mash chickpeas in a large bowl.

Mix well, then knead for 2 minutes until firm.
Divide into 3-4 portions, shape into patties, and coat in breadcrumbs.
Place on a baking sheet, spray with non-stick spray, and bake for 30 minutes, flipping halfway through.
Blend Caesar dressing ingredients until smooth.
