- 32 oz carton chicken broth
- 5 lbs russet potatoes
- ¼ cup milk
- salt and pepper to taste
- 8 oz package cream cheese softened and cut into cubes
- ½ cup salted butter, cut into cubes
Peel and cut the russet potatoes into 1-inch chunks, then place them in the bottom of a 6-quart crockpot.
Dot with 1/2 cup (1 stick) salted butter, cut into cubes, and pour in 32 ounces of chicken broth.
Cover and cook on high for 4-5 hours, until fork-tender.
Drain the excess broth and return the potatoes to the crockpot.
Mash them to your desired consistency using a potato masher.
Season with salt and pepper to taste.
Add the remaining 1/2 cup (1 stick) salted butter, 8 ounces of cream cheese, and 1/4 cup milk.
Mash until well combined.
Adjust the milk for the preferred consistency and keep the potatoes warm until serving.
