Ingredients
  

  • 5 cups shredded rotisserie chicken
  • ½ teaspoon onion powder
  • 1 cup shredded mozzarella cheese
  • ½ cup cottage cheese
  • 30 buttery round crackers such as Ritz, crushed
  • 1 10.5 ounce can cream of chicken soup
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon garlic powder divided
  • 4 tablespoons unsalted butter melted
  • 4 ounces cream cheese at room temperature
  • ½ cup sour cream
  • 1 ½ teaspoons Creole seasoning
  • 1 teaspoon sliced scallions or to taste

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, mix together the cream of chicken soup, cottage cheese, sour cream, cream cheese, Creole seasoning, onion powder, and 1/2 teaspoon of garlic powder until the mixture is smooth and well combined.
  • Gently fold in the shredded chicken and chopped parsley until everything is evenly coated.
  • In a separate medium bowl, stir together the crushed crackers, melted butter, and the remaining 1/2 teaspoon of garlic powder.
  • Spoon the chicken mixture into an 11x7-inch or 9-inch square baking dish, spreading it out evenly.
  • Sprinkle mozzarella cheese evenly over the top, then finish with the cracker mixture.
  • Set the baking dish on a foil-lined baking sheet and place it in the oven.
  • Bake for about 35 minutes, or until the crackers are golden brown and the edges of the casserole are bubbling.
  • Garnish with sliced scallions, if desired.
  • Serve warm!
