Oven
- 5 cups shredded rotisserie chicken
- ½ teaspoon onion powder
- 1 cup shredded mozzarella cheese
- ½ cup cottage cheese
- 30 buttery round crackers such as Ritz, crushed
- 1 10.5 ounce can cream of chicken soup
- 1 tablespoon chopped fresh parsley
- 1 teaspoon garlic powder divided
- 4 tablespoons unsalted butter melted
- 4 ounces cream cheese at room temperature
- ½ cup sour cream
- 1 ½ teaspoons Creole seasoning
- 1 teaspoon sliced scallions or to taste
Preheat your oven to 350°F (175°C).
In a medium bowl, mix together the cream of chicken soup, cottage cheese, sour cream, cream cheese, Creole seasoning, onion powder, and 1/2 teaspoon of garlic powder until the mixture is smooth and well combined.
Gently fold in the shredded chicken and chopped parsley until everything is evenly coated.
In a separate medium bowl, stir together the crushed crackers, melted butter, and the remaining 1/2 teaspoon of garlic powder.
Spoon the chicken mixture into an 11x7-inch or 9-inch square baking dish, spreading it out evenly.
Sprinkle mozzarella cheese evenly over the top, then finish with the cracker mixture.
Set the baking dish on a foil-lined baking sheet and place it in the oven.
Bake for about 35 minutes, or until the crackers are golden brown and the edges of the casserole are bubbling.
Garnish with sliced scallions, if desired.
