Sharp knife
- 8 oz bacon, cooked and crumbled
- salt and black pepper to taste
- 1 cup mayonnaise
- ½ cups red onion, chopped
- ½ cup cheddar cheese, shredded
- 3 cups cauliflower florets (raw)
- 1 tbsp Swerve, or other sweetener
- 3 cups broccoli florets (raw)
- 2 tbsp apple cider vinegar
- ½ cup raw pecan pieces
Cook the bacon using your preferred method.
Allow it to cool, then chop or crumble it, and set it aside.
In a small bowl, whisk together mayonnaise, Swerve sweetener, and apple cider vinegar until smooth and well-combined.
Dice the raw broccoli florets, cauliflower, and onion into bite-sized pieces.
Transfer the vegetables to a large salad bowl.
Add shredded cheese and nuts to the salad bowl.
Pour the prepared dressing over the vegetables and mix thoroughly.
Fold in the bacon just before serving to keep it crispy.
If preparing in advance, refrigerate the salad without bacon and add it before serving.
- Use pre-shredded cheese to save time. Cheddar works best, but feel free to use your favorite variety.
- Toast the nuts lightly for added flavor and crunch. Almonds, pecans, or sunflower seeds work well.
