Crockpot Spinach Artichoke Dip Recipe

Ingredients
  

  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • cup finely-chopped white or red onion
  • ¼ tsp fine sea salt
  • 1 cup shredded Mozzarella cheese
  • 1 cup light sour cream or plain Greek yogurt
  • ½ tsp black pepper
  • 1 bag fresh baby spinach, roughly chopped
  • 1 brick low-fat cream cheese, cut into 1-inch cubes
  • 1 can quartered artichoke hearts, chopped and drained

Instructions
 

  • Step 1: Melt butter in a small pan over medium heat. Add minced garlic and cook for about 30 seconds until fragrant. Remove from heat.
  • Step 2: Place softened cream cheese, sour cream, shredded cheese, drained spinach, chopped artichokes, and sautéed garlic into the crockpot.
  • Step 3: Stir slightly to combine ingredients evenly.
  • Step 4: Cover and cook on LOW for 2–3 hours or HIGH for 1–1.5 hours.
  • Step 5: Stir every 30–45 minutes to help everything melt evenly.
  • Step 6: Add salt, pepper, and optional hot sauce or cayenne to taste.
  • Step 7: Once fully melted and smooth, switch crockpot to warm setting.

Notes

  • For extra creaminess, add a dollop of sour cream or Greek yogurt before serving.
  • You can substitute frozen spinach with fresh, but blanch and drain it first.
