- ½ cup diced onion
- ½ cup chopped fresh parsley
- chicken broth
- tsp ground black pepper
- 1 poultry seasoning
- 1½ tsp salt
- ¾ cup butter
- 10 cups cubed whole wheat bread
- 2 large eggs
- ½ cup diced celery
Melt butter in a skillet over medium heat, then add onion and celery, stirring until softened, about five minutes.
Stir in salt, poultry seasoning, and pepper, cooking for another minute until fragrant.
In a large bowl, whisk chicken broth and eggs together, then fold in bread cubes and parsley.
Add the onion mixture to the bowl and mix until fully combined.
Using your hands, shape the mixture into 24 two-inch balls and place them on the prepared baking sheet.
Bake at 375°F (190°C) until golden and crisp, about 20 minutes.
