Ingredients
  

  • 2 cups fresh strawberries, hulled and diced Use ripe, juicy strawberries for best flavor.
  • 1 cup granulated sugar Adjust sugar to taste if you'd like a less sweet jam.
  • 2 tablespoons fresh lemon juice Adds brightness and preserves flavor.

Instructions
 

  • Measure and hull the strawberries, then dice them into small pieces.

  • Combine diced strawberries, sugar, and lemon juice in a saucepan.

  • Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves and the strawberries release their juices (about 5 minutes).

  • Bring the mixture to a boil, then reduce heat and simmer while stirring, until thickened (approximately 15-20 minutes).

  • Check the consistency; the jam should coat the back of a spoon. If it's too thin, simmer for a few more minutes.
  • Remove from heat and let cool slightly before transferring to a jar.
  • Store in the refrigerator for up to 2 weeks and enjoy on toast or with desserts.

Notes

When warm, this jam is perfect over ice cream; once cooled, it's great for toast, PB&J, or yogurt.
