Use ripe, juicy strawberries for best flavor.

Adjust sugar to taste if you'd like a less sweet jam.

Instructions
Measure and hull the strawberries, then dice them into small pieces.

Combine diced strawberries, sugar, and lemon juice in a saucepan.

Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves and the strawberries release their juices (about 5 minutes).

Bring the mixture to a boil, then reduce heat and simmer while stirring, until thickened (approximately 15-20 minutes).

Check the consistency; the jam should coat the back of a spoon. If it's too thin, simmer for a few more minutes.

Notes
When warm, this jam is perfect over ice cream; once cooled, it's great for toast, PB&J, or yogurt.
