Ingredients
  

  • 1 Onion, Chopped
  • 4 Green Onions, Sliced
  • ¼ tsp Black Pepper
  • ½ tsp Salt
  • 1 lbs Sausage, Sliced
  • 4 cups Chicken Broth
  • 2 cup Long Grain Rice
  • 2 Celery Stalks, Chopped
  • 1 Bell Pepper, Chopped
  • 2 tbsp Cajun Seasoning
  • 2 Cloves Garlic, Minced

Instructions
 

  • Brown the sausage in a large skillet, then remove and set aside.
  • In the same skillet, sauté the onions, bell peppers, and celery until softened.
  • Stir in the garlic and cook for another minute.
  • Add the rice, Cajun seasoning, salt, and pepper, mixing well to coat the rice in the spices.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Reduce the heat, cover, and let it simmer for about 20 minutes until the rice is tender and the liquid is absorbed.
  • Return the cooked sausage to the skillet along with the green onions.
  • Cook for another five minutes, stirring occasionally, until everything is heated through.
  • Serve hot as a main or a side dish.

  • Rinsing the rice before cooking helps remove excess starch and prevents it from becoming too sticky.
  • If you prefer a smokier flavor, use smoked paprika along with the Cajun seasoning.
