Ingredients
  

  • 1 pound chicken breast diced
  • 2 cups fresh pineapple chunks
  • 8 small tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • Salt and black pepper to taste

Toppings

  • 1 cup shredded lettuce
  • ½ cup diced red onion
  • ½ cup chopped cilantro
  • 1 avocado sliced
  • Lime wedges for serving

Instructions
 

  • In a bowl, season the chicken with paprika, chili powder, garlic powder, cumin, salt, and black pepper.
  • Heat olive oil in a skillet over medium-high heat. Add the chicken and cook until golden and fully cooked.
  • Add the pineapple chunks to the skillet and cook for a few minutes until lightly caramelized.
  • Warm the tortillas in a dry skillet or microwave until soft and flexible.
  • Fill each tortilla with chicken and pineapple mixture.
  • Top with lettuce, red onion, cilantro, and avocado slices.
  • Serve immediately with fresh lime wedges on the side.
