  • Combine graham cracker crumbs, melted butter, and a quarter cup of sugar in a bowl, mixing well until crumbly but cohesive. Press this mixture evenly into the bottom of a 9x13-inch dish to create the crust, then refrigerate for at least 15 minutes to set.

  • In a saucepan, whisk together ⅓ cup of sugar, cornstarch, lemon juice, and lemon zest. Warm over medium heat, stirring constantly, until the mixture thickens and begins to bubble, about 5-7 minutes. Remove from heat and stir in vanilla extract. Cover with plastic wrap directly on the surface to prevent a skin, and chill until set, about 30 minutes.
