  • 1 lb ground beef lean or a mix of lean and fatty
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 14.5 oz canned diced tomatoes bright and juicy
  • 4 cups broth chicken, beef, or veggie
  • 8 oz lasagna noodles broken into bite-sized pieces
  • 1 cup shredded mozzarella cheese or your favorite melting cheese
  • 2 teaspoons dried basil or fresh basil if available
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes optional, for a little heat

Instructions
 

  • Heat the large pot over medium heat and add a splash of oil. Once shimmering, add the diced onion and minced garlic, cooking until fragrant and translucent, about 5 minutes. The kitchen will fill with a warm, savory aroma.
  • Add the ground beef to the pot, breaking it apart with your spoon. Cook until browned and cooked through, about 8 minutes, until the meat develops a nice crust and the smell intensifies.
  • Stir in the canned diced tomatoes along with their juices, then pour in the broth. Mix in the dried basil, oregano, red pepper flakes (if using), and season with salt and pepper. Bring everything to a gentle simmer, allowing the flavors to meld for about 10 minutes.
  • While the soup simmers, break the lasagna noodles into bite-sized pieces and set aside. After the broth has simmered, add the noodles directly into the pot, stirring occasionally to prevent sticking. Cook until al dente, about 8-10 minutes, and the noodles have soaked up some broth, becoming tender yet maintaining some bite.
  • Once the noodles are cooked, stir in the shredded mozzarella cheese until melted and gooey, creating a creamy, cheesy layer throughout the soup. Taste and adjust seasoning with additional salt, pepper, or herbs if needed.
  • Remove the pot from heat and let the soup sit for a couple of minutes. Serve hot, topped with extra cheese or fresh basil if desired, alongside crusty bread or your favorite side for dipping. Enjoy the cozy, hearty bowl that tastes like a hug on a chilly day.
