Ingredients
  

  • 1 medium onion, sliced into 1/2-inch thick pieces
  • 1 package Knorr Rice Sides
  • 1 lb boneless, skinless chicken thighs, cut into chunks
  • ¼ cup cherry tomatoes
  • 5 green onions, sliced into 2-inch pieces2 cups boiling water
  • 1 clove garlic, finely chopped
  • 2 tbsp olive oil
  • 3 medium zucchini and/or yellow squash, cut into thirds
  • ¼ cup sliced carrots

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Season the chicken with salt and pepper if desired.
  • Heat oil in a deep skillet over medium-high heat, then brown the chicken.
  • Add the onion and garlic, stirring occasionally until the onion softens slightly, about 4 minutes.
  • Stir in the carrots, zucchini, and green onion, continuing to cook for 5 more minutes while stirring occasionally.
  • In a 13x9-inch baking dish, combine the boiling water with Knorr rice sides, then mix in the vegetables and chicken.
  • Cover the dish tightly with aluminum foil.
  • Bake for 30 minutes or until the chicken is fully cooked and the rice is tender.

Notes

  • For extra flavor, use chicken broth instead of boiling water when preparing the rice.
  • Add some crunch by sprinkling toasted breadcrumbs or crushed crackers on top before serving.
  • For a cheesy twist, stir in shredded cheese during the last 5 minutes of baking.
