Ingredients
  

  • ¼ tsp cayenne pepper (optional)
  • ¼ cup fresh basil leaves roughly chopped
  • 1 oz sun-dried tomatoes finely sliced
  • tsp tomato extract
  • ½ cup heavy cream
  • 4 tbsp grated Parmesan cheese
  • 1 tsp Italian seasoning or oregano
  • 4 garlic cloves minced
  • lbs skinless and boneless chicken breasts
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ cup chicken broth
  • ½ tsp crushed red pepper flakes

Instructions
 

  • Slice chicken breasts into thin cutlets and rub with salt and cayenne pepper.
  • Heat olive oil in a skillet over high heat.
  • Sear chicken for 5 minutes on each side until golden brown and set aside.
  • Lower the heat to medium-low, add olive oil, and sauté garlic for 30 seconds.
  • Add red pepper flakes and Italian seasoning, stirring until aromatic.
  • Deglaze the skillet with chicken broth, scraping caramelized bits into the sauce.
  • Stir in heavy cream, tomato paste, and sun-dried tomatoes.
  • Simmer for 1-2 minutes, then add Parmesan and basil.
  • Return chicken to the skillet, coat in sauce, and simmer until warmed.

Notes

  • Use freshly grated Parmesan for a richer flavor.
