Equipment

  • Baking sheet with rack
  • Small mixing bowls
  • Basting brush
  • Kitchen tongs
  • Meat thermometer

Ingredients

  • 2 pounds chicken wings fresh, skin-on
  • 1/4 cup soy sauce for marinade and glaze
  • 2 cloves garlic minced
  • 3 tablespoons honey for sweetness and caramelization
  • 1 tablespoon rice vinegar brightens the sauce
  • 1 tablespoon cooking oil for roasting
  • 1 lemon optional for squeezing at the end

Instructions

  • Preheat your oven to 200°C (390°F). Place a rack inside your baking sheet to allow hot air to circulate around the wings.
  • Pat the chicken wings dry with paper towels, then score the skin slightly with a knife to help the marinade seep in and encourage crispiness.
  • In a small bowl, whisk together soy sauce, minced garlic, honey, and rice vinegar until well combined. This creates your flavorful marinade and glaze.
  • Toss the wings in the marinade, making sure they're well coated. Let them marinate for at least 30 minutes, or up to a few hours for deeper flavor.
  • Arrange the marinated wings on the prepared rack, skin side up, leaving space between each piece for even cooking.
  • Bake the wings in the preheated oven for 35-40 minutes, until they are golden, crispy, and sizzling. Baste with some of the marinade halfway through baking for extra flavor and moisture.
  • Once baked, turn on your oven’s broiler for 2-3 minutes to crisp up the skin further, keeping a close eye to prevent burning.
  • Remove the wings from the oven and let them rest for 5 minutes. Then, brush them with a quick glaze of soy sauce and honey for that shiny, sticky finish.
  • If desired, squeeze fresh lemon juice over the wings to add a bright citrus finish that cuts through the richness.
  • Serve the wings hot, with a side of rice or vegetables, and enjoy their crispy, glossy exterior with juicy, flavorful meat inside.
