Ingredients
  

  • 1 red onion thinly sliced
  • 5 tablespoons olive oil
  • Fresh ground pepper to taste
  • 6 flour tortillas
  • 3/4 cup grated colby jack cheese
  • 1/4 cup crumbled goat cheese
  • 1/4 cup sour cream
  • Salsa for garnish

Instructions
 

  • Sauté the Onions: In a pan, heat 1 tablespoon of olive oil over medium heat. Add the sliced red onion and cook until translucent and soft. Season with fresh ground pepper. Set aside.
  • Assemble the Quesadilla: Take a tortilla and sprinkle half of it with grated colby jack cheese. Add crumbled goat cheese on top, followed by a layer of sautéed onions.
  • Cook the Quesadilla: Heat a medium pan with olive oil over medium heat. Fold the tortilla in half and cook until browned on one side. Flip and cook the other side until golden and crispy.
  • Serve: Once cooked, transfer the quesadilla to a plate, sprinkle with extra colby jack cheese, and cut into quarters. Top with sour cream and garnish with salsa and additional onions for a flavorful finish.
