- 2 lbs potatoes, cut into 1 ½- to 2-inch chunks
- 1 tsp kosher salt
- 2 lbs skinless, boneless chicken breasts, diced into 1 ½-inch pieces
- 2 tbsp olive oil
- 2 cups shredded mozzarella cheese
- ½ cup water or chicken stock
- 1 cup creamy Parmesan garlic sauce, such as Buffalo Wild Wings Parmesan Garlic Sauce
- 1 tbsp chopped fresh parsley, or to taste
- ¼ tsp grated Parmesan cheese (optional)
Coat the potatoes with olive oil, paprika, ¾ teaspoon salt, and ½ teaspoon black pepper in the slow cooker.
Place the chicken pieces on top, seasoning with the remaining salt and pepper.
Whisk together Parmesan garlic sauce and water in a bowl.
