Ingredients
  

  • ½ tsp paprika
  • ¾ tsp ground black pepper
  • 2 lbs potatoes, cut into 1 ½- to 2-inch chunks
  • 1 tsp kosher salt
  • 2 lbs skinless, boneless chicken breasts, diced into 1 ½-inch pieces
  • 2 tbsp olive oil
  • 2 cups shredded mozzarella cheese
  • ½ cup water or chicken stock
  • 1 cup creamy Parmesan garlic sauce, such as Buffalo Wild Wings Parmesan Garlic Sauce
  • 1 tbsp chopped fresh parsley, or to taste
  • ¼ tsp grated Parmesan cheese (optional)

Instructions
 

  • Coat the potatoes with olive oil, paprika, ¾ teaspoon salt, and ½ teaspoon black pepper in the slow cooker.
  • Place the chicken pieces on top, seasoning with the remaining salt and pepper.
  • Whisk together Parmesan garlic sauce and water in a bowl.
  • Pour the sauce over the chicken and potatoes.
  • Cover and cook on High for 4 hours or Low for 6 hours.
  • Check that the chicken is fully cooked and potatoes are tender.
  • Sprinkle mozzarella and Parmesan over the dish in the last 20 minutes, then cover.
  • Garnish with parsley before serving.

  • For crispier edges, broil the finished dish in an oven-safe pan for a few minutes before serving.
