Ingredients
  

  • 1 pint Cherry Tomatoes halved
  • 1 large Cucumber sliced into thin rounds
  • 1/4 cup Fresh Basil finely chopped
  • 1/2 cup Feta Cheese crumbled
  • 1 Lemon Juice from about 1 lemon
  • 2 tablespoons Olive Oil good quality
  • 1 small Red Onion thinly sliced and soaked in cold water for 10 minutes

Instructions
 

  • Wash all vegetables and herbs thoroughly, then pat dry with a clean towel.
  • Halve the cherry tomatoes and set them aside. Slice the cucumber into thin rounds for a crisp texture.
  • Finely chop the basil leaves and add them to your mixing bowl for that fresh, aromatic kick.
  • Thinly slice the red onion, then soak the slices in cold water for about 10 minutes to mellow their sharpness.
  • Drain the onion slices and add them to the bowl, along with the halved tomatoes and cucumber slices.
  • Crumbled feta cheese gets sprinkled generously over the mixture for creamy saltiness.
  • In a small jar or bowl, whisk together lemon juice, olive oil, a pinch of salt, and freshly ground pepper until the dressing is well combined and slightly emulsified.
  • Pour the bright, tangy dressing over the salad ingredients in the bowl.
  • Gently toss everything together until the ingredients are evenly coated with the dressing and look vibrant and fresh.
  • Let the salad sit for about 5 minutes to allow the flavors to meld and the juices to mingle.
  • Give it one last gentle toss, then serve immediately or refrigerate for up to 30 minutes for even better flavor.

Notes

Adjust the amount of lemon and olive oil to taste. For milder onion flavor, soak slices longer or rinse before adding. This salad pairs beautifully with grilled meats or as a stand-alone light meal.
