Ingredients
  

  • 2 tbsp extra virgin olive oil
  • ½ tsp kosher salt
  • 2 lbs small potatoes, unpeeled
  • flaked sea salt, Chopped fresh herbs (such as rosemary, flat leaf parsley, thyme or basil)
  • 3 garlic cloves, minced

Instructions
 

  • Add potatoes, olive oil, minced garlic, and salt to a 6-quart slow cooker, stirring to coat evenly.
  • Cover and cook on high for 3 to 4 hours or on low for 5 to 6 hours until the potatoes are fork-tender.
  • Avoid uncovering during the cooking process to maintain heat.
  • Once cooked, uncover the slow cooker, stir the potatoes, and taste to adjust seasoning, adding more olive oil or salt if needed.
  • Toss with fresh herbs of your choice and sprinkle with flaked sea salt for extra flavor.
  • Serve the potatoes immediately while warm.

Notes

  • For added flavor, toss in some chopped onions or a sprinkle of paprika before cooking.
  • Use baby potatoes or Yukon Golds for a creamier texture.
