Ingredients
  

  • 3 carrots, chopped
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • salt and pepper to taste
  • 3 potatoes, peeled and cubed
  • 4 lbs chuck roast
  • 1 cup water
  • 1 packet dry onion soup mix
  • 2 tbsp olive oil

Instructions
 

  • Season the chuck roast generously with salt and pepper.
  • Heat oil in a large skillet over high heat and sear the roast for about 4 minutes on each side until browned.
  • Transfer the seared roast to a slow cooker.
  • Sprinkle the soup mix evenly over the roast.
  • Add water to the slow cooker.
  • Layer carrots, potatoes, onion, and celery on top of the roast.
  • Cover the slow cooker with the lid.
  • Cook on Low for 8 to 10 hours until the roast is tender and vegetables are cooked through.
