Ingredients
  

  • 2 lbs Pork Tenderloin: Lean tender, perfect for slow cooking (two 1-lb tenderloins usually fit in most Crockpots).
  • 2 tsp Chili Powder: Adds a smoky slightly spicy kick.
  • ½ tsp Kosher Salt: Enhances flavors.
  • 1 tbsp Spicy Brown Mustard or Dijon Mustard: Tangy with a little heat balancing the sweetness of the barbecue sauce.
  • 2 cups Barbecue Sauce: Choose your favorite: sweet smoky, or tangy.

Instructions
 

  • Place the pork tenderloin in the Crockpot and sprinkle with chili powder and kosher salt. Rub the seasonings evenly over the pork.
  • In a small bowl, mix together the barbecue sauce and spicy brown mustard until smooth and well combined.
  • Pour the sauce mixture over the pork, making sure the tenderloin is fully coated on all sides.
  • Cover the Crockpot with the lid and cook on LOW for 3–4 hours or HIGH for 1.5–2.5 hours, checking early with a meat thermometer. Cook until the pork reaches an internal temperature of 145°
  • Carefully remove the pork from the slow cooker and let it rest for about 5 minutes before slicing or shredding.
  • Serve warm with extra barbecue sauce spooned over the top for maximum flavor.

Notes

  • For added flavor, try adding garlic powder, smoked paprika, or onion powder to the sauce mixture.
  • If you prefer a thicker sauce, transfer it to a saucepan and reduce it on the stovetop after cooking.
