Equipment

  • 5-quart or larger slow cooker
  • Ice cream scoop or tablespoon
  • Parchment paper
  • Baking sheets (optional, for extra space)
  • Airtight container for storage
  • Spatula for stirring

Ingredients

  • 2 lbs White Melting Chocolate
  • 8 oz Unsalted Dry Roasted Peanuts
  • 2 cups Semi-Sweet Chocolate Chips
  • 16 oz Salted Dry Roasted Peanuts
  • 8 oz Cocktail Peanuts
  • 4 oz Sweet Baking Chocolate

Instructions

  • Line your kitchen counter with parchment paper or prepare three baking sheets with parchment, as this recipe makes a large batch.
  • In a 5-quart or larger slow cooker, add white melting chocolate, sweet baking chocolate, and semi-sweet chocolate chips.
  • Cover with the lid and set the slow cooker to LOW for 1-2 hours, stirring occasionally to ensure the chocolate doesn’t burn.
  • Add all the peanuts to the slow cooker and mix thoroughly to coat them evenly in the chocolate.
  • Replace the lid and switch the slow cooker to Warm, or turn it off while leaving the crock in place to keep the mixture warm.
  • Using an ice cream scoop or tablespoon, drop small mounds of the peanut mixture onto the parchment paper.
  • After all the mixture has been used, rinse the crock with hot water for easy cleanup.
  • Let the peanut clusters set for about an hour until firm.
  • Once set, transfer them to an airtight container.
  • These clusters stay fresh for about a week and make great gifts!

Notes

  • You can use a mix of roasted, salted, or unsalted peanuts depending on your taste preference.
  • Try adding a sprinkle of sea salt or a drizzle of caramel on top before the clusters set for extra flavor.
  • Substitute some of the peanuts with almonds, cashews, or pecans for variety.
