Ingredients
  

  • ½ cup onion diced
  • 4 cups cheddar cheese shredded
  • 2 tsp minced garlic
  • 4 cups broccoli diced small
  • ¼ cup corn starch
  • 2 tbsp butter
  • 1 tsp pepper
  • ½ cup celery diced small
  • 4 cups chicken broth
  • 1 tsp salt
  • 1 cups heavy whipping cream

Instructions
 

  • Cut the broccoli into small bite-sized pieces.
  • Add the broccoli, butter, onion, celery, minced garlic, salt, and pepper into the crockpot.
  • In a separate bowl, mix the chicken broth with cornstarch.
  • Stir the cornstarch mixture into the crockpot.
  • Cover the crockpot and cook on low for 4-6 hours.
  • After the cooking time, add the heavy cream to the mixture.
  • Stir in the shredded cheese.
  • Cover and cook on high for 30 minutes, allowing the cheese to melt.
  • Stir thoroughly to combine all ingredients.

Notes

  • For a thicker soup, increase the cornstarch or reduce the chicken broth.
  • For extra flavor, add a pinch of nutmeg or cayenne pepper.
