In a large bowl, combine the cottage cheese, eggs, oregano, garlic powder, and Italian seasoning. Mix well until fully combined.
Gradually add in the flour (if using), mixing until a dough starts to form. You should have a soft, slightly sticky dough.
Cover the bowl with a clean kitchen towel and let the dough rest for 10 minutes.
While the dough rests, heat a cast-iron skillet or heavy-bottomed pan over medium heat.
After the dough has rested, divide it into small balls (about 6–8). Roll each ball into a flat, round disc, about ½-inch thick.
Place the flatbread onto the heated skillet and cook for 2-3 minutes on each side, or until golden brown. Flip and cook the other side until crispy.
Repeat with the remaining dough, adding a little oil to the pan between batches if necessary.
Serve warm with your favorite dips or toppings!
