Ingredients
  

  • Oregano: This herb adds a nice earthy slightly peppery flavor to the flatbread, giving it a familiar, Mediterranean taste.
  • 2 Large Whole Eggs: Eggs bring moisture and help bind the dough together giving it a soft, elastic texture.
  • ¾ tsp Garlic Powder optional: Garlic powder is optional, but it adds a nice depth of flavor that complements the herbs and cheese.
  • 1 cup Cottage Cheese: This is the key ingredient. Full-fat reduced-fat, or fat-free cottage cheese all work here, and it adds a subtle tang and moisture to the flatbread.
  • 1 tsp Italian Seasoning optional: A mix of herbs like basil, thyme, and oregano adds a delicious herby kick to the bread, though you can leave it out if you prefer a simpler flavor.

Instructions
 

  • In a large bowl, combine the cottage cheese, eggs, oregano, garlic powder, and Italian seasoning. Mix well until fully combined.
  • Gradually add in the flour (if using), mixing until a dough starts to form. You should have a soft, slightly sticky dough.
  • Cover the bowl with a clean kitchen towel and let the dough rest for 10 minutes.
  • While the dough rests, heat a cast-iron skillet or heavy-bottomed pan over medium heat.
  • After the dough has rested, divide it into small balls (about 6–8). Roll each ball into a flat, round disc, about ½-inch thick.
  • Place the flatbread onto the heated skillet and cook for 2-3 minutes on each side, or until golden brown. Flip and cook the other side until crispy.
  • Repeat with the remaining dough, adding a little oil to the pan between batches if necessary.
  • Serve warm with your favorite dips or toppings!

Notes

  • For a crispier texture, bake slightly longer but keep an eye on it to avoid burning.
