Salad
- 2 cups chicken , shredded
- 4 cups Chinese cabbage (Nappa Cabbage) finely shredded
- ½ cup shallots/scallions finely sliced on the diagonal
- 1 cup carrot finely julienned
- 1½ cups red cabbage finely shredded
Asian Dressing
- 1 tbsp sesame oil (toasted)
- 2 tbsp light soy sauce
- ½ tsp black pepper
- 1½ tsp fresh ginger , grated or very finely chopped
- 3 tbsp rice vinegar
- 1 garlic clove minced
- 1 tsp sugar
- 2 tbsp grapeseed oil
Garnishes
- 2 tsp sesame seeds
- 1 cup crunchy noodles
Add all dressing ingredients to a jar, seal it, and shake well.
Let it sit for about 10 minutes to allow the flavors to develop.
Meanwhile, in a large bowl, combine the salad ingredients with half of the crunchy noodles.
Pour the dressing over the salad and toss everything together to coat evenly.
