Ingredients
  

Salad

  • 2 cups chicken , shredded
  • 4 cups Chinese cabbage (Nappa Cabbage) finely shredded
  • ½ cup shallots/scallions finely sliced on the diagonal
  • 1 cup carrot finely julienned
  • cups red cabbage finely shredded

Asian Dressing

  • 1 tbsp sesame oil (toasted)
  • 2 tbsp light soy sauce
  • ½ tsp black pepper
  • tsp fresh ginger , grated or very finely chopped
  • 3 tbsp rice vinegar
  • 1 garlic clove minced
  • 1 tsp sugar
  • 2 tbsp grapeseed oil

Garnishes

  • 2 tsp sesame seeds
  • 1 cup crunchy noodles

Instructions
 

  • Add all dressing ingredients to a jar, seal it, and shake well.
  • Let it sit for about 10 minutes to allow the flavors to develop.
  • Meanwhile, in a large bowl, combine the salad ingredients with half of the crunchy noodles.
  • Pour the dressing over the salad and toss everything together to coat evenly.
  • Divide into serving bowls, then finish with an extra sprinkle of crunchy noodles and sesame seeds.
  • Serve right away.

Notes

  • Shaking the dressing instead of whisking ensures better emulsification, making it smoother and well-balanced.
  • If you prefer extra crunch, lightly toast the sesame seeds before sprinkling them on top.
