Ingredients
  

  • 2 clove garlic minced
  • 2 tbsp  fresh lemon juice
  • extra-virgin olive oil
  • 2 cups teamed white rice
  • 2 tbsp tomato paste
  • scallions greens and white, chopped
  • 1 tsp Cajun seasoning
  • 4 small sweet peppers or chilis, diced

Instructions
 

  • Heat oil in a medium non-stick pan over medium-high heat.
  • Then add the pepper and garlic, sautéing for about 3 to 5 minutes until the peppers soften slightly.
  • Stir in the tomato paste and cook for about 2 minutes, stirring constantly to warm it through.
  • Add the rice, Cajun seasoning, and lemon juice, stirring until the rice is heated through.
  • Finally, toss in the scallions, mix well, and serve immediately.

Notes

  • Adjust the Cajun seasoning based on spice preference—start mild and add more if needed.
  • For extra depth, use smoked paprika or a pinch of cayenne.
  • A squeeze of fresh lemon at the end enhances brightness.
