Ingredients
  

  • Shredded potatoes
  • Chopped onions
  • Chopped red orange, and yellow peppers
  • 1 fresh tomato chopped
  • 1 egg
  • Pizza sauce
  • Flour tortillas
  • 2 pieces of bacon per pizza
  • Fiesta blend cheese
  • Chopped avocado for topping
  • Sour cream for topping

Instructions
 

  • Cook the Potatoes: Start cooking the shredded potatoes in a pan on the stove.
  • Prepare the Veggies: Chop up the peppers, onion, and tomato. Add the onions to the pan with the potatoes and sauté them together.
  • Cook the Peppers: In another frying pan, sauté the chopped peppers until they soften and caramelize.
  • Scramble the Egg: Scramble the egg in a bowl and cook it in a separate pan.
  • Assemble the Pizza: Heat a tortilla in a frying pan over medium heat. Spoon some pizza sauce over the tortilla. Spread the cooked potato and onion mixture evenly over the sauce.
  • Add Cheese and Egg: Sprinkle a little cheese over the potatoes. Spread the scrambled egg on top of the cheese.
  • Top with Peppers and Bacon: Add the sautéed peppers to the pizza, followed by chopped or torn pieces of crispy bacon. Top with more cheese.
  • Check and Serve: Cook until the tortilla is slightly brown and firm on the bottom and the cheese is melted. Remove from heat and top with chopped avocado and a dollop of sour cream. Serve immediately and enjoy!
