Ingredients
  

  • 1 tbsp butter
  • 1 can crushed pineapple, drained
  • 1 tsp ground cinnamon
  • ¼ cup  cold water
  • 1 cup white sugar
  • 2 tbsp cornstarch
  • 1 tbsp vanilla extract
  • 2 eggs

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish.
  • In a mixing bowl, combine pineapple, sugar, cornstarch, water, eggs, and vanilla until smooth.
  • Pour the mixture into the greased dish, dot with pieces of butter, and sprinkle generously with cinnamon.
  • Place in the preheated oven and bake for 1 hour, or until set and lightly golden on top.

Notes

  • Use crushed pineapple for an even texture or pineapple chunks for more bite.
  • Whisk the eggs separately before adding to prevent curdling.
  • A light dusting of nutmeg can be added for extra warmth.
