I’ll be upfront – I’m not a vegetarian. But once spring and summer come around, I am craving fresh fruits and veggies, and frankly, meat can take a back seat then sometimes! Not to mention the fact that meat is more expensive and often more time consuming to cook. So sometimes I feel like making a meatless meal, and I wanted to share an easy vegetarian recipe I came up with recently: cilantro and lime black bean tacos. Nothing ground breaking, but it is easy, healthy and delicious!
Vegetarian Tacos:
For the filling (instead of meat):
– About 3 cups of black beans, cooked and mostky drained
– 1-2 teaspoons of cumin (to taste)
– 3-4 tablespoons fresh chopped cilantro
– Dash of lime juice
– Salt to taste
Toppings:
– Diced red pepper
– Fresh salsa (diced tomatoes, diced onions, diced fresh pineapple, cilantro, lime juice, diced hot chilies if desired)
– Cheese of your choice
– Cilantro
– Sliced jalapenos
– Sliced avocados, or whatever else you feel like!
It’s delicious served with fresh pineapple.

Yes, I am! This looks yummy:) As for the time of year, however, we have snow in our forecast here. Spring has departed for the moment. All the more reason to bring Springtime to our dinner table:)
Oh, yes, I heard that it was going to be snowing up there. Crazy! It’s chilly here, too, but not snowing. It’s so strange .. because it was SO warm/hot about a month ago!

Oh, tacos are delicious! Typically, instead of black beans you would use ground beef seasoned with cumin and chili powder … or shredded pork with cumin and maybe some lime. It’s delicious! There are endless varieties of tacos you can make. And usually, I like soft tacos using small flour tortillas instead of the crunch shell I used here … but both are good. :)
I would like to try the way you spice your black beans. My husband doesn’t like black bean tacos, but maybe he would like it better if it were spiced differently.
It’s worth a try! You could always try black beans seasoned this way as a side sometimes, to try it it out. :)

What I crave in spring is veggies, for sure, and especially asparagus, but also I find myself wanting light, creamy things for some reason. Oh, and fresh herbs. The tacos look delicious.
Ohhh, yes asparagus! One of my favorite veggies. I recently had some fresh asparagus that had been grilled *perfectly* (definitely not by me!) … it was soooo good!
And I do agree about the light creamy herbed things! Perfect for spring. I wonder why that is …
